Why? What can I say, I like drama... :P
Scar never loved Sarabi, but he knew Mufasa had feelings for her. So Scar wanted her, just to torment Mufasa. Sarabi also had feelings for Mufasa, but she thought she wasn't good enough to be his queen. And Sarafina never saw Mufasa as anything more than a friend.
So those betrothals were doomed to failure. XD
