The covers of the last two animatics are actually taken from the same moment!
In the first one, as shown in the Headlock Animatic, Kate is going through a particularly rough moment and hallucinates about her earliest memory of Lorelai (sob, why do I love angst?). The second one shows what really happened: the actual moment they first met!
With the new Animatic coming out today, the Headlock one will make more sense than just pure ALNST reference and angst! (maybe?)
