Dear legions! It's been few times we have shared recipes but is for sure something we will continue to do now and then when we're feeling inspired. I sure feel inspired at the moment, and after been trying out this recipe in the weekend for a couple of weeks I feel I want to share it with you! I found this super easy recipe, and as always with no confidence when making anything in the kitchen I said to myself: "yeah.. let's see how much shit this will go". Haha, so bitter 😂BUT - hear me out. This gal managed on first try and ever since I have never had any problems! It is THAT simple. It is based on banana, but I want to encourage you to try it out even if you don't like banana. When succeeding extra well and combined it with blueberries and such - I honestly can't taste the banana. I just taste floofy pancakes. The recipe gives 6 of those pancakes! I usually eat 2-3 which is quite a good amount for me! I love combining it with blueberries when they're not terribly expensive (like when I did the documentation of this recipe for you.. just.. no. 10€ for 500gr..).I put together the recipe her for you so its easier to take a screenshot or print:

Make sure you find a big banana! The original recipe says 150gr banana, and I have my scale in the kitchen to check. And I have noticed I get 6 perfect pancakes in equal size when the banana is more of 180-200gr! See what you find - dig into the banana pile in your store. You should see me when I do.. 😂
Have some kind of bowl! I have an old, sad but loyal one that does the job well. Do this to the banana, just chop it into pieces and into the bowl!
Add 2dl of wheat flour in the bowl! For you in the US that is (according to converter) 0.84 cups! I guess you can round that into something that makes sense!
1 table spoon of baking powder into the bowl!
1 ml spoon with salt! We say "kryddmått" in Swedish which can translate to a pinch of salt of spice measure, haha. Don't know what makes most sense to you guys in the US - but if you look at the little 1 ml measuring spoon I have on the photo maybe it's easier. 1 ml it is, not more or less!
Add 2 dl of milk (0,8 cups) of your choice! I always go with oatmilk, and what I do like with using that is the natural sweetness in oats that comes out in the pancakes. Delicious!
Then it looks like this! And I just use a fork to muuush everything into one batter because whenever these ingredients are added on top of the banana, it is super easy to make it soft! And a fork for me makes it as smooth as I possibly can do with my skills 😁
Tadaaa! And please note - my batter isn't 100% smooth. It doesn't have to be! But the majority, yes! Then leave it like this for 2 min while you prepare the pan and stuff. So the batter can settle a bit.
I have a non-stick pan, and I put it on 8 out of 10 in heating first, but whenever it is warm I put it down to 5-6 out of 10! Difficult to explain that exactly since we all have different stoves - but now you know how I do it, and you just have to find your way with your stove 🫶 And I use olive oil for baking, frying and dressings. I recently learnt that not all olive oils are good to heat up? So I made sure I grabbed once with this kind of information!
So this tool is my go-to. One scoop of this one equals approx 3/4 of a dl, and I have found that this one is the best tool for me to get even pancakes. You can of course make your pancakes bigger. The recipe is for 6 pancakes, but that can easily mean 3 bigger ones too! Feel free to find your way in this!

The moment I just dropped the batter on my pan so you can see the difference in just a minute!
After not even a minute you see the pancake rise! It's getting floooooofy!
So after approx. 2min I flop the shit out of it to the other side and it looks like this! 😁
I think syrup is a great idea on pancakes! But at least for me it gets too sugar-y on the pancakes unless I want them as a dessert. But for the mornings I want to have the syrup vibe but not as sweet! This is one that I use, and not saying you need to aim for it - each to their own. But if you relate to what I say and would like to have one like that - I highly recommend this one!
BOOM! Then this is how I did it last time! I took just a smaaaaaaaaaaall little click of hazelnut spread from Lidl (I went with the plantbased one) and put that on top of the pancakes on a very thin layer to just have a small bit of a chocolate hazelnut vibe on Saturday morning. Then I added the syrup and since blueberries costed more than a kindney that week, I just went with slicing another banana! If you try it out, I am curious what you think and how you will match it! What kind of fruit/berries and so on! I hope you will enjoy it though, and I don't want to sound clichée. But if I can do this one in 10 min, anyone can! 😂With love, Madeleine
