1- It can't really be said enough times how satisfying it is to connect and remove the new Joy-Con from the Switch 2, but I think the most remarkable thing about them is that at this point Nintendo has totally conditioned us to saying the phrase "Joy-Con" in reference to a game controller without a hint of irony. I'm not sure I even know what that's supposed to mean. It's a thing that connects joy to your life? I don't know. I support it fully.
2- It's a small detail, but the inclusion of a dedicated button for organizing and "ejecting" your virtual game cards is a huge improvement to managing all the digital content I've bought for my Switch. Not having to go to the eShop and remember where the page is to redownload all my old software is convenient, but mentally, using the metaphor of "ejecting" the games is a huge improvement for legibility.
3. I'm still not 100% sure I've internalized what "HDR" looks like since I've never been able to do a side by side comparison, but Mario Kart World does look good.
4. The finish on the new Pro Controller is very soft, the buttons feel better, the D-pad is slightly better, and the white accents look good. This makes the Switch 2 Pro Controller the best traditional gaming controller accessory Nintendo has ever made.
5. I legitimately thought Metroid Prime 4 was a launch title right up until I walked into Gamestop to pick up my Switch 2. Oops. The idea that game console launches are sparser now than they used to be is a myth though. When is the last time that a game console had a slam dunk launch with 2+ incredible exclusives? SNES? The N64 had PilotWings and Super Mario 64, but a third game did not come out for the console for nearly 2 months after that. That's literally true. Having one good-to-great game each month for the first year of a console is an improvement on what it used to be.
