Here's a super fun feature coming in the Chapter 10 update- There's now an in-game chapter select option! That way you won't have to mess with saves and stuff if you wanna start partway through the game like before!
By default, the chapters will unlock as you progress through the story, with their names first appearing in plain white when you unlock them and then getting colored in and adding a little icon after you've beaten them! (You can select a chapter whether it's colored in or not, I just thought this was a cute feature!)
There's also an option to unlock all chapters in the options menu! So if you've lost an old save or just wanna start partway in, you can always do that! Though be warned, this decision can't be undone- once they're unlocked there's no going back!
