I made this while I was sick and dramatic and wandering around in sweatpants like a Victorian ghost, and honestly? It slapped. So here’s my loose, chaotic, emotionally healing recipe for sick day chicken soup:

🧄 Ingredients:

  • 2 chicken breasts (or thighs if you're feeling sexy)

  • 2 stalks of celery

  • 2 carrots

  • ½ a big sweet yellow onion

  • Fresh herbs (thyme, rosemary, flat-leaf parsley)

  • 1–2 tbsp butter

  • Splash of olive oil

  • 1 tbsp flour (optional, for that stew-ish thickness)

  • 1–2 tbsp pre-chopped garlic (or crush your own if you’re superior)

  • Salt & pepper to taste

  • Paprika, onion powder, garlic salt, white pepper, celery seed

  • 32 oz chicken bone broth

  • A glug of dry white wine (I used Sauvignon Blanc)

  • Soy sauce (for umami)

  • Hot sauce (for drama)

🔪 Instructions:

  • Mirepoix that bitch
    Rough chop ½ a big yellow onion, 2 carrots, and 2 celery stalks. Doesn't need to be fancy—just not fingerless. Keep your knuckles in mind unless you're aiming for a body part in the stew.

  • Chicken time
    Slice chicken breasts however you want (thin strips, cubes, abstract). Season with salt, pepper, and if you’re feeling it, toss in a tablespoon of flour. Brown them in a Dutch oven with some olive oil until they get a little color, then set aside. No need to overthink it. We're sick.

  • Melt and sauté
    Toss in butter to the hot pan. Add your mirepoix and a little salt. Sauté until soft-ish. Deglaze with that splash of wine and scrape up all the flavor bits from the pan.

  • Season like a witch
    Toss in garlic (I used lazy jar garlic, sue me), paprika, celery seed, onion powder, garlic salt, white pepper, and all your chopped herbs. Mix that potion.

  • Reunite the chickens
    Add your chicken back in. Pour in the entire 32 oz carton of bone broth. Bring it to a simmer.

  • Simmer down
    Let it cook low and slow for 20–30 mins while you scroll on your phone and forget you were cooking. Stir occasionally, taste, adjust salt/pepper.

  • Spicy secrets
    Add a splash of soy sauce and a few dashes of your favorite hot sauce. Helps with the sinuses. Helps with ~life~.

  • Serve
    Eat it straight from the pot in your sweatpants. Or pour it into a cute bowl if you’re feeling photogenic.

  • I made this while half-dead and horny for comfort food. It's not fancy. It's not revolutionary. But it hits.

  • Trader Joe’s has a pre-chopped mirepoix if you wanna cheat. I won't judge you. I’ll probably love you more.

  • The trash plate or bag is essential.

  • Optional garnish: a fuckin’ blanket, Netflix, and me in your ears.
