DESCRIPTION

Did you know the origin of the term bacon referred to back meat from a pig, then later became synonymous with pork in general before arriving at the other side of the animal to refer to cuts of pork belly? Isn't etymology fun???

Anyway here it refers to cuts of fish that are cured and flattened whole, sometimes remaining connected in the middle or "back" of the fish (eh? eh?? ...ok kind of a stretch but it's shorthand for a breakfast food we know, deal with it, lol)

I promise I'll stop talking about food now for at LEAST the next couple of pages.
